Cream of Mushroom Soup for Canning

I've been trying to find a recipe for canning "cream of ..." soups.  I really want to spend less $$ at the grocery store and those cream soups are steadily rising in cost...albeit not much, but still rising.  At any rate, I found this recipe on-line.  I still have yet to try it out but I hope to do so this week.

Cream of Mushroom Soup

1/3 cup butter

1 pound mushrooms (chopped or sliced)

3/4 cup flour

2 quarts meat stock (chicken bouillon may be substituted)

1 T. salt

1 tsp. lemon juice

Melt better.  Add mushrooms and cook until brown.  Add meat stock, saving enough to mix with the flour.  Make a paste with meat stock and flour.  Mix all ingredients and heat until it boils.  Put in jars and process in pressure canner for 40 minutes at 10 lbs. pressure.  When opening to use, add equal amount of milk and soup. Makes 5 pints.  Can be tripled.

It sounds really good.  Like I said, I hope to try it soon.  I imagine you could probably make a basic "cream of chicken soup' as well just by removing the mushrooms.

It does sound good. And I just love cream of mushroom soup. I could eat it right out of the can!

Thank you. I love recipes that use cream soups but when I get the can it affects my family's system. I am hoping this would be better for us.

Sounds good. I love to cook in my crockpot, But i get annoyed that so many recipes call for canned soups. Now I can make my own. Thanks.
