As the Garden Grows + a quick, cheap recipe

Yesterday was another busy day here at the house.  I'm still on vacation and really dread having to start working again next week.  Even though I don't go to the office, the pressure with the office is really high right now.  I'm an independent contractor and work as I please on what needs to be done, whether it's at 5 a.m. or 10 p.m.  However, they have so much going on at the office right now that they're asking the regular employees to work on the weekends and after hours quite a bit.  There are grumblings I hear from those employees and I feel that if they don't change things soon, we'll start to see resignation letters flowing.  But alas, I won't think about work right now.

As for yesterday, I worked some more in the garden.  I planted 3 rows of green beans for a total of about 75 green bean plants.  And, I planted a few carrots in-between the tomatoes (I read a book about companion planting) to see if it works or not.  We shall see.  I have the remainder of the tomatoes to plant as well as the okra and cucumbers.  I think if there's room, we may also plant sunflower seeds.  The kids would love that. 

We went down to the tank yesterday and the kids caught tons of minnows.  More than that though, they wallowed in the mud like little pigs.  I'll need to take pictures sometime to show y'all.  They had so much fun.  It's a wet-weather creek that runs in front of my in-laws house that flows into a "tank" (pond).  The creek is flowing nicely, not real deep, but enough to splash in.  However, the tank is quite full.  I saw a 8"-12" carp in it the other day (much to my surprise).  It's also very snakey down there so I'm not sure how much longer we'll be able to safely go down there and play.  As for the minnows, we bring a few up to the house and the kids put them in their aquarium that sits outside.  We re-fill the water daily so that the minnows have fresh water.  I believe we also caught a perch or two. 

As for today, we're headed out to run a few errands.  Tonight is "family date night", so we're going to grab some movies.

Hubby wants me to make him some jamabalaya which I'll probably do this weekend.  Oh, I made a really great and cheap dinner last night.  We had leftover rice from Wednesday night and a little bit of grilled chicken.  So, I threw the rice and chicken (cut into pieces) into a pot, added some frozen broccoli, then opened a can of cream of chicken soup and mixed it in the mixture with a little bit of water and we had a great "casserole".  The kids cleaned their plates.  We even have some left over for lunch today.  Talk about a cheap meal!!
