Gluten Free French Bread

Well I'm very happy with the bread recipe! You honestly wouldn't know that it's not a traditional wheat bread if you didn't see it made! Everyone here loved it. Especially baby girl who hasn't had bread in a while!
The only changes I made to the recipe below was, I left out the egg substitute and instead or white rice flour I used brown rice flour that I milled fresh. I also have to say that you really need a french or Italian loaf pan. I just orderd one since I can't get one local. If you put this on a cookie sheet the batter will spread instead of rising up.
Gluten Free French Bread
- In the bowl of a heavy-duty mixer, place flours, xanthan gum, salt, and egg replacer (if used).Blend with mixer on low.
- In a small bowl dissolve the sugar in the water, and add yeast.
- Wait until the mixture foams slightly, then blend into the dry ingredients.
- Add the butter, egg whites, and vinegar.Beat on high for 3 minutes.
- To form loaves, spoon dough onto greased and cornmeal-dusted cookie sheets in two long French-loaf shapes or spoon into special French-bread pans.
- Slash diagonally every few inches.If desired, brush with melted butter.
- Cover the dough and let rise in a warm place until doubled in bulk, 20 to 25 minutes.
- Preheat oven to 400 degrees. Bake for 40 to 45 minutes.
- Remove from pan to cool.

My daughter and I both have celiac disease, and are totally gluten free. I will definitely try this recipe since you have recommended it. gluten free baking has a much higher incidence of "flops" that regular baking...so a recommendation goes a looooong way.

Oh I think you will like it! Even my picky kids didn't know it wasn't "real" bread until I told them lol. I just ground up some more rice and I'll make another batch of bread tonight. I'm going to try it in muffen pans to make "buns" and see if that works a little better. At least until my new pans get here. :-)
