My Day & Canning

Well today has been one of those days you keep dropping things, banging into things etc.  For all of us! LOL  But despite that I pulled a 10 pound package of ground beef out of the freezer and cooked it up.  Took about 2 pounds out to make sloppy joes for lunch.  The rest I canned this afternoon.  I still have 40 pounds or so of ground beef in the freezer to deal with.  I hit a really good sale earlier this year!  I'm going to can another 30 pounds in different ways (plain, sloppy joe mix, chili etc.) and the last 10 pounds I'll thaw and make into meat loafs.  I think I'm going to try making them in muffin tins this time.  Then they will be easy to grab one or two for dh lunch or make a real quick meal for us. 
I'm planing to work on my pumpkins tomorrow then set some beans to soak at night.  For the next day I want to make baked beans to can.  Stocking up on my own "convenience" food.
Our appliance repair man couldn't make it on the weekend and was suppose to come by today.  But dh and I talked and decided to put off the repairs on the fridge.  We want to replace it in the spring anyway, so we'll clean the condenser our selves and if need be dh will redo the seal himself.  Don't really want to put a lot of money into something we are going to replace.

A friend of mine bought me a pressure canner for a buck or two at a yard sale. But. I have not had the nerve to use the thing, since it was SO cheap-I wonder if it might be broken. The seal looks a bit cracked and such too. I have been wondering if there is a place that I could take it to in order to get it 'okayed' and possibly fixed. Do you know of any bigger companies (that span from Canada to US) that I could take it too. I have heard too many scary stories to 'chance' my first attempt with a faulty canner. Thanks. My husband and I are trying to do more canning and putting food up. I would be interested to see how you store all your food and how you organize it. We have a tiny house and we don't have a lot of storage areas. I don't know if you can/want to share pictures or maybe you already have somewhere. I would be interested to see how you have all your storage set up and see all the wonderful things you have been writing about!

I store most of my canning in the basement on shelves. I'll try to get some pics soon! We are also getting ready to renovate the kitchen and pantry/laundry room. Adding lots more shelves for storage. I'll share pics when we are done that to. I do have ideas for storeing canning and food preps in a small area. I'll share them in a post soon, kiddies need me right now. :-)
