I’ve been talking to a lot of people wanting to learn how to can lately. So I though a little series on how to can would be helpful. I started canning 10 years ago when I planted my first BIG garden. I have been hooked ever since.
Lets start with what your going to need. First you’ll need a good canning book. Many people recommend the Ball canning book sold in the I have never seen it for sale in Next you will need a canner. If you only want to do jams, relishes and other high acid food. You will only need a water bath canner. This looks like a HUGE stock pot with a jar rack inside. If you would like to can meat, veggies that are not pickled then you are going to need a pressure canner. You will also need jars. The jars can be new or used. I would suggest looking at yard sales, freecycal, thrift shops ect. For jars. Please only use the newer style of jars not the old glass lid types. They do not seal properly and can lead to food spoilage and sickness if you ate it unknowingly. You can reuse the jar rings (screw bands) as long as they are not rusty or bent. This could interfere with the sealing pressure. Do NOT reuse the lids. They get bent when opening the jars and may not seal re properly. Another helpful purchase would be a canning kit. They are inexpensive and are very handy. They will have a funnel, jar lifter, magnetic lid lifter, and ladle. |
