Good morning everyone. It's warm this morning and feels wonderful,we have a steady rain coming down that seems to be settled in for the day. I got up this morning and seen the rain and began to feel discouraged but then I thought what are you doing? This is God's why of giving the beautiful flowers and plants what they need for rebirth. April showers bring May flowers!!! There won't be much in the way of doing anything outside so I should be able to work on my throw some today. I did work on it a little yesterday.
I usually clean out the car on Fridays but I can't do that in the rain so it's going to have to wait for the next nice day. The laundry room needs a good cleaning and I still need to clean and wipe out the fridge and freezer in the kitchen.
Last night I made some cheddar biscuits to go with the casserole and they were a huge hit. They were the mock cheesey biscuits from red lobster.
The origonal recipe is:
2 C. bisquick 2/3 C milk 1/2 C shredded cheddar cheese 1/2 C butter or margarine,melted 1/4 tsp garlic powder
Preheat overn to 450*F
Mix bisquick,milk,and cheese until a soft dough ball forms. Drop by spoonsful onto an ungreased cooking sheet. Bake for 8 to 10 minutes until golden brown. Mix butter and garlic powder. Brush mixture over warm biscuits before removing from cookie sheet.
I redid it just a little to be less processed:
My recipe is:
Preheat oven to 400*F
Tammy's Yummy Cheddar Biscuits 3 C. whole wheat pastry flour 1 tbs kosher salt 1/2 tsp. baking soda 2 tsp. baking powder 2/3 C soften unsalted butter 1 1/8 C milk 1/2 C. heaped of shredded cheddar cheese.
put all ingredients except milk in mixing bowl and mix well then add milk and until mixing until well mixed and dump onto a lightly floured surface. Knead 3 to 5 minutes and then roll out with rolling pin to 1/2" thick and cut with biscuit cutter and place on ungreased cookie sheet bake 12 to 14 minutes or until golden brown.
Topping 1/4 C unsalted butter 1/8 tsp minced garlic
A few minutes before the biscuits are done put the butter and garlic in a small saucepan and melt, brush on top of finished biscuits.Let stand 1 mintue then serve.
These will be a regular on our menu. They were a great hit with everyone.
Dinner tonight I'm thinking of doing breakfast for super. Turkey bacon,french toast,may some fruit. Yeah that sounds good and everyone loves have the am in the pm here. |
