Overcast Sunday

Good Sunday everyone. Well this is my first official entry on my new blog.  It's overcast and a bit chilly here in North Cental West Virginia.  It's really hard to believe that it's already April.  Wow how the first three months on of this year have passed by so quickly.

 

We are not into Spring full swing. I can see the buds starting to appear and it makes me feel so good to see the rebirth of nature.

 

The kids only have a couple more months left of school then it's off for the summer. 

 

John and I are still working on getting a new house.  WE are in no rush and are saving as much money as we can for a down payment.  We both would really like to get a place out in the country with some land.  I need plenty of space for my gardening and I would like to down the road try my hand at raising some chickens for eggs,cows possibly and for sure bigs for pork.  Goats is up in the air as I'm still reading up on them.  But I must say all I've heard about them is positive and the health benefits alone from the milk is outstanding. So we shall see.  I would have to say that it's all in the Lord's hands.  His will,will be done.

 

Dinner tonight will be beer can chicken (with an old can of pepsi we had in the fridge.), creamy mashed potatoes,homemade gravy made from the both of the chicken,green beans, and a salad w/ choice of dressing. 

 

I made this chicken last year and it's awesome.  I stuff the neck with an onion which helps to flavor the poultry.  I set it on a rack so that the broth fall to the bottom of the baking dish.  It doesn't take long at all for it to get done and is soooo moist and tender. It's absolutely delicious when made in the charcoal smoker. YUM YUM!!!

Glad to see you aboard. Your chicken sounds really great - I'll have to try that, next chicken meal. Do you rub your skin (chicken's, I mean) with anything? I rubbed my last one with salt and cooked it uncovered ... wonderful, wonderful crispy skin!

Yes I do, I take a combonation of season salt and garlic powder and rub the inside just under the skin so that the seasonings get roasted into the meat and also on the skin.
