Buttermilk Pancakes

3 C. whole wheat pastry flour

3 Tbs. sugar

3 tsp. baking soda

3/4 tsp. salt

3 C. buttermilk

1/2 C. milk

3 eggs

1/3 C. melted butter

 

In a large mixing bowl,combine flour,sugar,baking powder,baking soda and salt. In a seperate bowl,beat together buttermilk,milk,eggs,and melted butter.  Keep the 2 mixtures seperated until you are ready to cook.

 

Heat a lightly oiled (I use nonstick canola spray) griddle,over medium heat.  You can flick water across the surface and if it beeds up and sizzles it's ready to cook on.

 

Pour the wet mixture into the dry mixture and blend. stir until it's just blended together. Don't over stir it.  Pour onto griddle in 1/2 C portions for each pancake.  Cook until bubbly and dry on the edges,flip and cook on other side.

 

Yields:

12, 5 inch pancakes 

 

Serve with homemade syrup or sugar free syrup and fresh fruit. YUMMY!

These sound delicous. My husband loves to make biscuits from scratch so I will share the recipe with him.
