02:29 , June 21, 2006 Can you can homemade potato soup? My sister made an AMAZINGLY good batch - and loads of creamy potato soup is left over. Can we jar that up? I'm also in need of a pressure canner. Where is the best place to get something like that, Walmart? I used to can up lots of stuff in prep for Y2K (call me gullible), so I am thankful that I am able to jump right back into it, but I had given my pressure canner away (and my water bath canner for that matter). Any advice?

i don't know if you can can dairy products....
I freeze my homemade soups - I put them in bowls that a) hold enough for one family-sized meal and b) can be popped out into my pans without overhanging. When they are frozen, I remove and place in vacuum sealed pouches, label and replace in freezer. You have to cook them really slow so as not to scortch the bottom when you re-heat them, or, I guess you could defrost first (but that would require advance planning on my part, and my lack of that is why I freeze meals to begin with!)

By the way, I think I have just barely stumbled upon your blog, and I have really enjoyed it thus far!

Gena - loved having you over at my blog for a visit!! I also did stuff for Y2K and gave away my water bath canner - I had to order another - from the same place - know they love me!!!
I have looked at WalMart for a pressure canner and they have cookers, but not canners - they are a bit pricey on the web... around $150 - I may have to wait till next year for that one!!!!

Dairy products do not can well. They tend to curdle. Freezing potato soup is the way to go.

The daily, hopefully not too fragmented, display of whatever is on the homesteading segment of my scattered brain. I love anything farm...ranch...sufficiency. Y2K was the highlight of my late 20s - well, preparing for it was. Even though nothing happened, I learned a lot, and it birthed a new interest in things I'd previously cared nothing about. I love canning, making masa, and drying vegetables. I want to learn to make salsa, fruit butters and sauces, and soap. Oh, and candles, too. Can someone tell me what lye is and where to find it? And do I need goggles? Help.
