Bok Choi Cakes
Combine:
3 cups washed, chopped Bok Choi
3 Tbsp. Cilantro, chopped
2 Green Onions, finely chopped
1 clove garlic, peeled and chopped
½ red chili, finely sliced
1 egg white
1-3 Tbsp. soy sauce
1 Tbsp. corn flour
2 Tbsp. whole wheat flour
Form into cakes. Saute or fry in olive oil. Serve with dressing.
Dressing:
3 Tbsp. Cilantro, chopped
2 Tbsp. soy sauce
1 Tbsp. honey
1 Tbsp. peanut butter
Juice of one lime
This recipe was in this weekÂ’s newsletter from the World Hunger Relief CSA Food Club. Sounds interesting. I think I will substitute Tahini for the peanut butter in the dressing, though.
