Lemon and Garlic Chicken
6 to 8 pieces of chicken- I use boneless skinless breasts or thighs
4 tablespoons olive oil
Juice of 2 lemons
2 tablespoons parsley
2 to 3 cloves garlic, minced
Salt and Pepper to taste
Mix oil, lemon juice, parsley and garlic together. Place chicken in lightly oiled baking dish. Pour marinade over chicken and place in refrigerator for an hour or so. Bake at 350 until done. To make a sauce, pour juices in pan into a small pot, bring to a boil and thicken with a little cornstarch.
You can also cook this in the crockpot. I like to put all the ingredients in a gallon size freezer bag and freeze several of these for busy days. Then, all I have to do is defrost, dump in a pan or crockpot and cook.
Serve with brown rice and a salad. Easy, healthy and yummy!
