Sounds perfectly awful, doesn't it? I first read a recipe for "Green to Go" smoothies in an issue of Above Rubies magazine. After reading the article and the health benefits of the ingredients, I decided to try one for myself. I was pleasantly surprised and have been making my own version using spinach for several months. This is my breakfast on most mornings.
Spinach is labeled a "super food" because it contains so many nutrients. Spinach is rich in protein, Vitamin A, Vitamin C, calcium, iron, folate and manganese. I've tried other greens, but spinach tastes the best to me by far.
These are the basic directions but you can make changes and substitutions, depending on your personal taste. Try dried figs instead of or in addition to the banana; lettuce instead of spinach; juice in place of the water.
1 ripe banana (very ripe tastes best)
1 tablespoon coconut oil and/or 1 tablespoon flax oil
1 tablespoon raw honey
1 cup water
5 or 6 ice cubes
spinach or other greens
Put banana, oils, honey, water and ice in blender. Add several handfuls of spinach. Pulse several times to chop the ice and then blend on high speed until of desired consistency. Enjoy your "Super Smoothie"!
