Spring is here and that means your faithful Senior Editor here needs to be spending more time doing a little Spring Cleaning and working in the great out-of-doors! I know you all know what I'm talking about. There's just always so much that needs to be done.
So in the interest of simplifying things on our little online Homestead here, I'm going to change things up a bit. Instead of doing our normal

We always make up extra sauce to set aside when we're anticipating leftovers (i.e. spaghetti sauce for ziti, extra mushroom sauce for rice dishes, gravies, etc.) It makes things taste almost as good since they don't get dried out in the reheat process.

A new favorite at our house is roast that I cook in the crock pot for 8 hours on low. I combine 16 oz of salsa with one taco seasoning packet, pour over roast and let it cook. First meal, roast with sides, Second meal, shredded roast in whole wheat tortillas with toppings, Third meal, shredded roast over brown rice or baked potatoe with toppings.

I do a couple of things:
1) when I make a time-intensive meal, such as beef stoganoff - the real kind - or lasagne or enchiladas or chicken cordon bleu, I actually make a 6x batch and freeze the others. it only takes an extra hour in the 2-3 it takes, and then I have MRH's (meals-ready-to-heat) for later
2) when I do a beef roast, we have the "sunday dinner" meal one night; then the next night I boil the beef in its juices and seasonings from the bottom of the pan for "au jus" sandwiches, the next night I add taco seasonings for shredded beef tacos (dh won't eat ground beef) and finally the last night I take the leftover taco meat, tortillas and toppings and we have quesadillas. I have found however, that it makes a long week of beef, so I think I will freeze the meat after the sandwiches and save the tacos for the follwoing week when we are not "beefed" out!
I think I do some other things too, but I cannot remember them!

Oh fun! Well, when I stir fry veggies I make extra...then the next night I add cooked lentils to the coarsely chopped cooked veggies, some shredded pepperjack cheese, chopped tomatoes, a little cumin and chili powder, roll in tortillas, put in baking dish, pour on enchilada sauce and bake for 30 minutes - yummy veg. enchiladas.

When I make a salad I make a "BIG" salad. I put lots of good veggies in there and the first night we will have it as a side dish. But the next night it will be part of a nacho or taco salad. Just add your favorite meat mixture, cheese, chips and sour cream and yummo. You get those nice raw veggies without the fuss.

we make extra for a planned leftover. I shred the meat from a roast for sandwiches.
I cut up the meat from a ham to put in scalloped potaotes, use the ham bone for split pea soup.
All leftover veggies get put in a container in the freezer, when it's time for making soup, I put all of those frozen veggies in the soup.
Leftover bread is made into croutons.
Before I serve supper, I take out a portion for my husband's lunch the next day. He gets homemade food, without any extra fuss.
There is so much you can do with leftovers!!

For leftover roast, turkey, or chicken, I usually make it into a soup or stew. Chicken and noodles, yum!
Most other leftovers, we just eat at lunchtime. Occasionally, if we have several leftover choices, we'll have a leftover supper and everyone chooses which leftover they want to eat.

I remember!!!
I have Wednesdays and Saturdays set aside for left over night, and people get to choose what they want to eat; I have a friend who will make menus with the leftover dishes listed, and then they get to "order" their meal, like in a restaurant. I haven't had to use this yet, but my kids are little and don't have a problem with leftovers.
I was also reminded that when I have over-cooked or stale brownies (not that the latter happens often, but it has been known....) I toast them like old bread adn throw them in my blender for ice cream topping! I store them in the freezer.

With 13 people in the house,
I'm always looking for frugal ideas.
Here's mine:
Eat your big meal at noon.
Everyone is more willing to eat the leftovers a
few hours later for supper, then they would be the next day!
Instead of hearing, "What, that again!?!"
You hear, "Hey, is there any more of that.... left?"
Sound good? Give it a try!
Then come back and pick me for the book!
