It seems more and more of us are trying to wean or remove sugar from our diets. I received two questions regarding ways to preserve without sugar:
I was thinking how I need to learn to make strawberry jam without sugar! So if anyone has any recipes or basic techniques for preserving sugar free, that would be great.
How can I make jams and preserves that are sweet without using unhealthy, overprocessed sugars?

Making Sugar Free Jam
You can make sugar free jam or jam that is sweetened with a healthier sweetener such as honey by using a type of pectin called Pomona Pectin. This pectin does not require sugar in order to make your jams jell.

One box of pectin will make approximately 20 cups of jam.

Anyone use Splenda? I do! You can make the jam that way. Or has anyone tried Stevia? I'm going to try both ways this summer.

I thought Splenda was a chemically created, chlorinated based product. Although one can never belive everything, I haven't found anything other than Splenda marketing to refute the claims made by http://www.truthaboutsplenda.com/.

I used Pomona's Universal Pectin for the first time last summer and I really liked it. I used honey and/or concentrated grape juice. It worked well. What I really liked about Pomona's (besides gelling without sugar) is you can make as much as you want (multiple batches) at one time. I don't think you can do that with the other pectin brands.
