Need an egg but out of them? Substitute ground flax seed. For one egg: mix together 2 Tbsp. finely ground flax seeds plus 3 Tbsp. water. Let the mixture sit for a couple of minutes until it becomes like jelly, then add as you would eggs. Remember to always to freeze your ground flax, because it goes bad very quickly from oxidization (heat, light, air) of the healthy oils.
