If your potatoes get eyes, cut them into halves (make sure they have about 3-4 eyes on each chunk) and plant them in the garden or flower bed.
In a couple months you can dig them up and have new potatoes!

Check your zone....I'd say (and I am guessing) if you live in North Pole, Alaska....probably not..... ;)
Other areas though you bet you could :) Again, zone depending :)
