School has started and the weather has cooled off. It feels like Fall, here in Texas that means temps are in the 90's instead of triple digits! But as Fall comes around and the kiddos start school, I always think of hot cereal and apples. Mom always sent us off with a tummy full of oatmeal or malt-o-meal. Hope this will fill some of your little tummies happily.
Apple Oatmeal
Fix-It and Forget-It Cookbook
Makes 4-5 servings.
2 cups milk(I've used soy milk)
2 Tbsp honey
1 Tbsp butter(no substitute)
1/4 tsp salt(I use sea salt)
1/2 tsp cinnamon
1 cup dry old-fashioned oats-not quick cook
1 cup chopped apples
1/2 cup chopped walnuts
2 tbsp brown sugar
1. Mix together all ingredients in a greased slow cooker.(I usually mix in a bowl in put in the greased cooker.)
2. Cover. cook on Low 5-6 hours
3. Serve with drink
Variation: Add 1/2 cup light or dark raisins to mixture.
Creamy Old Fashioned Oatmeal

Makes 4 servings
1 1/3 cups dry old fashioned rolled oats
2 1/2 cups plus 1 tbsp water
dash of salt
Mix together in a bowl and pour into a lightly greased cooker.
Cook on Low 6 hours
The formula is this: for one serving, 1/3 cup dry oats and 2/3 cup water plus a few grains of salt. Multiply by the number of serving you need.
Notes: I use steel cut Irish oats in both recipes. They seem to stand up better to a longer cooking period. I usually have my oatmeal on to cook 6-8 hours. I also usually add some kinds of dried fruit: blueberries, strawberries, etc.
Puffy Baked Apple Pancake
Ingredients
cooking spray
1/2 cup evaporated milk
1/3 cup all-purpose baking mix
2 tablespoons granulated sugar, divided
3 large eggs, separated
2 tablespoons orange juice
1/4 teaspoon ground cinnamon
1 medium apple, cored, quartered, cut into thin slices
1 tablespoon cinnamon-sugar
Directions
PREHEAT oven to 375° F. Spray 10-inch ovenproof skillet lightly with nonstick cooking spray. Place in oven for 10 minutes.
PLACE evaporated milk, baking mix, 1 tablespoon sugar, egg yolks, orange juice and cinnamon in blender; blend until smooth. Beat egg whites in large mixer bowl until soft peaks form; gradually add remaining sugar. Beat until stiff peaks form. Fold milk mixture into egg whites.
POUR batter into hot skillet. Gently push each apple slice about 1/2 inch into batter, peel side up, to form a spoke-like pattern around batter. Sprinkle with cinnamon-sugar. Bake for 10 to 15 minutes or until set. Serve immediately.
