I have been graciously invited to contribute to the Front Porch. This is my first post, hope I can be of some interest to you all. While I was fixing dinner tonight I was trying to decide where to start. Then a light came on, I will start with tonight’s dinner.
I did a beef pot roast tonight. It only took 45 minutes to cook. I used one of my favorite kitchen items. I cooked it in my pressure cooker. I really enjoy my pressure cooker. It is a great time saver. I learned to fix roast in it from my mother-in-law years ago.
Beef Pot Roast ( Pressure Cooker)
3lb. beef roast
1 tablespoon olive oil
2 cups water (I actually use 1 16 oz. can of low sodium beef broth
1 package Lipton beefy onion soup
Always be sure and read the directions that came with your cooker. It may differ from mine.
Heat the oil in the bottom of the cooker. Heat on medium.
Brown the roast well on all sides; remove roast.
Pour water (or broth) into the cooker.
Then place roast rack in cooker.
Add dry soup mix.
Close lid securely, place pressure regulator on vent pipe. Cook on medium, when the pressure regulator starts rocking gently, time and cook roast for 45 minutes.
Be very careful about letting the pressure drop. Gently slide it off the burner and let it set until the pressure drops of its on accord.
Once that is done you can remove the lid and thicken your gravy.
I usually add mushrooms to the pot before I cook the roast.
This is a simple and speedy way to fix a good nutritious meal.
