in Elm Mott, Texas offers a 3-day Homesteading Course, which covers gardening, orchards, livestock, beekeeping and more.
In the agricultural area, they offer classes in:

Raising Chickens
Beekeeping—An Introduction

Homestead Carpentry

They also offer many other classes for learning those homestead crafts, such as basketry, bread making, soapmaking, pottery, carpentry, blacksmithing, etc. Check out their website for more information on their working homestead, school, and visitor's center. Our family recently spent a Saturday afternoon there and had a wonderful time. We enjoyed wandering through the herb and vegetable garden, watching the workers pressing sorghum and then seeing the juice being boiled down into syrup (not a job I'd like to have). We also toured the antique gristmill and learned a bit about how they grind the grains into the flours they sell. My daughters were fascinated with the ladies who were making coffee cups in the pottery shop.
I would love to take their homesteading classes, and who knows I just may get to do that someday. Sure would be fun if some of you were there, too!
