Ole' prolific zucchini....actually it is the one thing we rarely ever plant in our family vegetable garden. Not that we don't like it - we do!! We always get it given to us by the bagful each summer so why take up space to grow it in our own garden? I'm blessed with a houseful of children that love to eat...and eat their vegetables too! I don't know what the secret is to getting children to eat all their green stuff but mine just love it. We've always grown a garden and they are used to that type of foods so maybe that is it? I invented this recipe the other week when having some ladies over for a fellowship dinner. They got raves and oohs and aahs. So I tried it again when we got some large zucchini given to us last week. My children gobbled them up....they even helped make them. Give a boy a paring knife and tell him to start carving out zuke boats and he is in his element! (Course momma is supervising the use of the knife!)
Here is how we concocted these scrumptious tasting boats:
Washed and sliced off the top layer of the zucchini lengthwise. Scooped and cut out the center meaty portion to make a sort of hollowed out crude looking boat.

Saved that scooped out part and added more to it with grated fresh yellow summer squash to make a total of 4 cups of grated or finely chopped squash or zuchinni.

To that 4 cups add in:
3/4 cup finely diced onion
2 garlic cloves, minced
1 cup grated Cheddar cheese
2 eggs, beaten
1 cup butter flavor cracker crumbs
2 tsp. chicken broth powder (like powdered boullion)
1/4 tsp. freshly ground black pepper
3/4 cup mayonnaise
Mix all together and scoop into hollowed out zuchinni.

Sprinkle with parmesan cheese and dried parsley flakes.
Bake immediately. If allowed to set on the baking sheet for a prolonged time the squash will start to liquify and juices flow from the grated squash. So bake right away.
Lay out on a greased baking sheet and bake for 25 minutes at 400 degrees. Serve while hot.
These are great with any type of summer meal! This recipe makes 18 - 4" long boats......
