Honey Spice Sweet Potatoes
3 lbs. sweet potatoes
1/4 - 1/2 cup honey (to taste)
5 tablespoons butter (or more to taste)
Juice of 1 orange
1/2 teaspoon ground cinnamon (or to taste)
1/2 teaspoon ground ginger (or to taste)
Boil whole sweet potatoes in salted water until tender, 35-40 minutes. Remove from water and let cool slightly. When cool enough to handle, remove skins. Slice sweet potatoes into large bowl.
Mix in butter, honey & orange juice and mash potatoes. Stir in spices, taste and adjust seasoning as needed.
For glazed sweet potatoes, slice cooked sweet potatoes ½ inch thick. Heat butter and honey in nonstick skillet, adding orange juice and spices when butter is melted, stir until smooth. Add sliced sweet potatoes and cook over medium-low heat for a few minutes until potatoes are glazed and heated through.
