Salad!!

My favorite salad ingredients:
- Cucumber and tomatoes - a goodly amount of each
- Lettuce - too much lettuce is the downfall of any good salad
in my extremely humble (lol) opinion! There should be no more lettuce
that there are tomatoes and cucumbers.
- Onion - just a little bit
- Avocado - lots
- Mushrooms - more than lots, lots and lots
- Freshly grated parmesan cheese
- Homemade ranch or Italian dressing depending on my mood :)
The above ingredients are essential for my favorite salad but being a
health conscience woman we also regularly add some other ingredients:
- bell peppers
- carrots
- radishes - well, this one we only add sometimes!
- Feta cheese
Fun things to add for a twist:
- grated cheddar cheese
- cottage cheese
- chopped almonds
- grilled meat
- hard boiled egg
I love salad!!

Homemade Orange Juice Concentrate?

Is it possible to make homemade orange juice concentrate? Have any of you done this?
How about freezing fresh orange or tangerine juice?

Turkey Breakfast Sausage Â…

Kayinpa ( Urban Pioneer) was asking about turkey sausage on her blog Â… we have made both of these recipes and were pleased with the results. :)
Turkey Sausage
Emilie Barnes - Things Happen When Women Care
~ Mix together thoroughly:
1 lb. ground turkey
1 tsp salt
1/2 tsp nutmeg
1/2 tsp sage
1/2 tsp thyme
1/8 tsp cayenne pepper
~ Shape into 12 small patties. Fry in ungreased skillet or bake at 350* for 10 to 15 minutes in a shallow pan until done. Do not overcook or patties will become tough. Over baking produces juicier patties and is easier when feeding a crowd.
Turkey Breakfast Sausage
Sally Fallon - Nourishing Traditions
1 pound ground turkey
1 small onion, peeled and finely chopped
1/4 teaspoon each cumin, marjoram, pepper, nutmeg, oregano, cayenne pepper and ginger
1/2 teaspoon each dried basil, thyme, sage
2 teaspoons sea salt
1 tablespoons whole grain bread crumbs
1 egg, lightly beaten
2 tablespoons butter
Mix all ingredients and chill well. Form into patties and sauté in butter.
To store in freezer, form into patties and store in an air tight plastic container, using parchment paper to line the container and separate the patties.
*** We froze patties from both recipes on a cookies sheet lined with parchment paper and then stored them in a zipper bags.
