More Summer Recipes.....FRIED GREEN TOMATOES
3 med green tomatoes 1/4 c cornmeal 1/4 c Parmesan cheese 2 tbsp all purpose flour 3/4 tsp garlic salt 1/2 tsp dried oregano 1/8 tsp pepper 1 egg, beaten 1/4 c veg. oil Salt Slice the tomatoes 1/4 in thick. Lightly sprinkle tomatoes with salt. Drain on paper towels for 30 to 60 minutes. Meanwhile, combine cornmeal, Parmesan cheese, flour, garlic salt oregano and pepper in a shallow plate or dish. Dip each tomato slice into the egg, then the cornmeal mixture. In a medium skillet, heat oil over medium high. Fry tomatoes a few at a time for 2 minutes per side or until golden brown. Drain on a paper towel and serve immediately.
Old Fashioned Lemonade
6 lemons 1 1/2 c sugar 2 1/2 qts. ice water Wash lemons; slice thin. Place in a stainless or enamel flat container. Add sugar. Pound with mallet to squeeze juice from lemon rings. Stir to make syrup. Let stand 20 minutes. Add water to pitcher after putting in beaten lemons. Stir well. Serve within 6 hours.

A Change in my Menu .....If you have been reading along with me with my menu on the sidebar, I have changed my item for supper tonight. I am going with the Crock-Pot Black Bean Chicken and I have listed the recipe below. Let me know what you think !!!
A Great Summer Recipe !!!CrockPot Black Bean Chicken 16oz jar of Salsa 2 large chicken breast 1 can pinto beans, drained 1 can black beans, drained 1 can corn, drained 1 can Rotel, undrained Spray a large crock-pot for easy clean-up. Put the black beans, corn and half of the salsa in the bottom of the pot. Put the chicken in next (frozen is fine). Top with pinto beans, Rotel and rest of salsa. Cook on low all day or high for 3-4 hours. When chicken is cooked, remove from crock-pot and shred with two forks. Put shredded chicken back into crock-pot and mix with other ingredient thoroughly. Serve over chopped lettuce with tomatoes, sour cream, cheese and tortilla chips. This can also be served over rice or rolled up in tortillas. Yields about 8 cups. ( I used frozen corn and I don’t like to use can beans, so I prepare my beans first and then use in the recipe.) I also double this recipe for my family and to have left overs for the next days lunch. Finding TIme to Post Again....
Don't you love that picture? Just a simple way of life..... That is what I have been up to. Just a simple way of life. I have been here at HSB visiting around and checking on friends, old and new, but just had nothing to post about here on my blog. We are some-what on our way to a summer break, but really, what is a "summer break" ? DO you feel like you are on "break"? We don't. There is so much to do, work or fun alike. But, for what the world calls it, we are on a "small Summer break" !! There I said it........... As far as homeschooling, we homeschool all year round. We don't have to, but it just works out that way. We like it and so, why change it. SO that brings us to where we are right now. We are doing some school work, but on a very relaxed schedule. If we do not have somewhere to go, I let the girls sleep in and then we do a little bit of school work. I mean, there is not need to just sit around and stare at each other. We are already having some HOT temps around here !! This whole week we will be above 90 !! So, we have a lot of time in the house in the middle of the day. What is good is that around late afternoon, early evening, there is still some wind blowing, and we are able to go outside to find something to do. Well this is enough about nothing for now. I have a few other things to post about that I will take time to do later today.
Boy, have I've been busy !!
Where has the time gone? I just seem to be so busy with things here around the house and with homeschooling. Spring is popping up everywhere around here and I have so much I want to get done. At church we have been doing something that we call "House - To - House" and what it is , is a schedule that rotates around the church family and we each have one family over a month for dinner and we also are invited over to one family's house a month for dinner. We went to our "host" family's home Monday evening for dinner. It was a young a couple and they have a sweet little baby boy. We enjoyed our dinner and then we cleared the table for Domino's !!! We played "Train" for a couple of hours, I believe. It eas so much fun and our whole family was able to join in. I feel that most people just do not take enough time to fellowship with one another, share a meal and sit around the table playing games and talking. I love this time we get to have and I must say, I like to do it even more then twice a month. If you enjoy this type of evening, please share with me ( and others) what type of games you enjoy around the table that the whoile family can join in together to play.
Broccoli Salad.....Spring is around the corner !!!![]() Broccoli Salad
1 Head of Broccoli, wash & drain, chop to desire size
1/2 c white raisins ( I mostly use regular raisins)
1/4 c chopped green onions
3/4 c sunflower seeds ( I never have these to add)
6 slices of bacon, cooked & chopped
Dressing:
1 c Mayo
1/2 c sugar
2 Tlb white vinegar
Mix well until sugar dissolves.
Pour over salad items and mix well. Chill for a short time before eating.
My shopping for the week.......Okay ladies, here is how it went yesterday with the shopping.
Since we were on vacation last week, we knew that we could use some of our budget money for food and gas this pay period, for the trip. We did really good sticking to the budget. But as expected, we "dipped" a little into this week's money. Things are fine, but just made things a little "interesting" to cover everything.
So, for this week, Jeff had $150 for everything I needed to do. It goes as follow:
Sarah's piano lessons ( for the month) $40
Gas for the week ( not a tank full, lol ) $35
Car wash ( very needed with the salt and such) $10
Groceries ( for just this week) $66 ( $10 was for a SMithville ham for Easter dinner coming up !!! It was only $ .99 a lb !! )
Total for all ................................$ 151 !!!!!
Only $1 over what Jeff had given me !! I did it !!!! I pretty much can deal with whatever he has to give me and it makes me wonder why I need as much as I do on the pay periods where I get my "whole" budget amount. I could be saving some for this year's Christmas already.
The week's menu goes as this:
Monday: Chicken patty sandwiches, chips /dip
Tuesday: Homemade sauce with spaghetti and garlic toast
Wednesday: Sausage, eggs, and biscuits
Thursday: Pork loin chops, rice and veggies
Friday: Home made tacos, chips w/ dip
Saturday: ????
So there it is. I also bought what was needed for sandwiches, salads, and snacks for the week. Of course breakfast items were included in this trip also.
That's it and I am sticking with it, lol !!!

Tennessee: Calls Needed to Stop Testing Bill
Dear HSLDA Members and Friends:
We need your help now! Tennessee homeschoolers are facing the most
serious threat to their freedom since the homeschool law was enacted
23 years ago.
House Bill 2795 would subject non-public school students, including
homeschool students, to additional state testing. It would require
them to take subject matter tests based upon state-approved textbooks.
It would also require them to pass the Tennessee comprehensive
assessment program tests before receiving a high school diploma. These
new testing requirements would also apply to students being taught at
home through extension or satellite programs of church-related
schools. Your calls to state representatives are needed to stop this
dangerous legislation!
If House Bill 2795 passes, it will essentially mean the end of
homeschooling in Tennessee. Parents deciding to teach their children
at home would have to conform their curriculum to the material taught
in public school in order for their children to be able to pass the
state tests. The Tennessee Department of Education, not parents, would
determine whether a student taught at home was eligible to receive a
high school diploma.
Sponsored by Representative G.A. Hardaway (92nd District), this
horrendous bill is now in the House Education Committee. It is
scheduled to be heard by the Special Initiatives Subcommittee of the
House Education Committee this coming Wednesday, February 27.

Hardaway and at least one member of the House Education Committee with
this message:
"Please oppose House Bill 2795, which would impose public school
testing on non-public school students. This bill would effectively
destroy non-public education in Tennessee by requiring private
schools, church-related schools, and homeschools to adopt the public
school curriculum for their instruction programs."
