New Beginnings

......more of a "good thing".  Or by the smile, "a great thing".

Lemon Muffins...makes 40 large muffins.

6 cups flour

4 cups sugar

1 tsp baking soda

1/2 tsp salt

8 eggs

2 cups sour cream

2 cups melted butter

3 tbsp grated lemon peel

2 tbsp lemon juice

Streusel:

1/2 cup flour

1/2 cup sugar

1/8 cup cold butter

Glaze:

1/2 cup sugar

1/3 cup lemon juice

In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, whisk the eggs, sour cream, butter, lemon peel and juice.  Stir into dry ingredients just until moistened.  Fill greased or paper-lined muffin cups 3/4 full. 

In a small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs.  Sprinkle over batter.

Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean.  Cool for 5 minutes before removing from pans to wire racks.  In a small bowl, whisk glaze ingredients, drizzle over warm muffins.

Our first outdoor picnic of the season...It was such a beautiful day yesterday that some of the kids wanted to eat outside...didn't even have our summer tables out....but who needs that when you have a floor or rubbermaids.

FYI....  After I posted these pictures I realized that Ethan was wearing the same clothes in the top pictures as he was in a previous post...this is why I got rid of five bags of clothes....they seem to wear the same thing over and over again....I showed these pictures  to Ethan , and he says..."so, they are my favourite" I guess then  he won't mind having less clothes in his closet
