Make-A-Mix & healthy snack ideas

Does anyone use this book??
I've had it forawhile and yet to try things. But I'm determined to make things for my son that are healthier.
There are several things in there I want to try. So was just curious to if anyone else uses this book, or is there any other books to check out. I love the idea of sort of bulk mixes, just healthy. My kiddo needs healthier snacks. Since we are going to homeschool I'd love to have other things on hand and maybe teach him some baking/measuring stuff. Not so much hands on the stove as i'm leary of that besides the fact we have a gas stove....lol
Course the thing that bugs me most is that I have to turn my oven down practically 100 degrees from the required temps. Anything that says 350 is better at 250 otherwise the outside burns and the inside isn't done. So I'm still learning the right things to do with that thing.

I love the buttermilk pancake recipe - my favorite par tis that it takes about 20 seconds to cook each side. I have tried substituting WWflour, but it is not the same. I love the muffin mix, too, but again, if you are trying to cut out the refined flours and sugars, I don't think it is that great of a book. Just my 2 cents.

I have not yet found a book that has healthy mixes... I have really played with the pancake mix - substituting ww flour, but it makes it heavier - it doesn't cook as fast and the batter is thicker. and I cut out the sugar once, and added honey as I made the pancakes, but that didn't work well either. I went back to the plain mix, but I will experiement more another time.
