Sourdough Journal #4
Update:
I had a near sourdough fatality! I put the plastic bowl full of sourdough sponge in the oven and turned it on, briefly, to warm it up a bit. I said “I won’t forget,” but promptly did! I rushed into the house (I was out counting pumpkins when I remembered) and was able to pull it out before the bowl melted!
I divided the dough in half today, for scientific study; which half will taste best? I put two sticky blobs of dough in pans. The other half I added flour to until it was the consistency I am used to. I baked all four loaves at the same time.
I haven’t tasted what I’ll call the “floured loaves” yet, but the sticky loaves are very tasty - just a hint of the sour flavor and very moist. That might be because I couldn’t wait for it to cool properly. A day or two will tell.
I think I am going to test a new recipe next week; if I do, I will post that recipe and the results. I am having fun experimenting and I feel a bit of a trailblazer!
