Sourdough Journal #3
It’s been a couple weeks since I started my sourdough adventure. I stir the starter every day and once a week, I make bread, and/or feed it.
I stirred my starter yesterday and it FINALLY smells sour. Yay! So far, all the bread has been fairly sweet, so I look forward to a sour tasting sourdough.
I’ve noticed this is a firm, dry bread. If I use the amount of flour called for, it is sticky and hard to work with. I’ve been adding quite a lot more than called for, so it’s probably the cause of my dry bread!
Today, I will try it just as called for, plop the gooey dough into the pans and see what we get. I will pass on my discoveries today or tomorrow and we’ll all learn something!
If anyone out there already KNOWS how to make the perfect sourdough loaves, I would love any recipes, tips or techniques.
Sourdough Trivia: Alaskan old-timers are called "sourdoughs." Newcomers must live in the state for several years to acquire their sourdough status.

Good luck with the bread today. I've never made sourdough so I'm not much help but I hope it tastes just right.
Love the trivia.....I wonder what an old time Montanan is called?

I am eagerly awaiting your report of the next bread. Mary Jane Butters (maryjanesfarm.com) has a sourdough recipe in her book - or maybe you can find it on her web site? Good luck! - Chris

Very cool! I also want to know how the 'gooey' dough turns out.
