Beef Eye of Round in the crock pot
This is easy as pie (I took the recipe from AllRecipes.com)!
2 cans Cream of mushroom soup
1 packet onion soup mix
1 cup water
5 lb.beef eye of round roast
Mix cream of mushroom soup, onion soup mix, and water in the bottom of your crock pot. Place a 5 lb. roast in the pot, coating it with the gravy, and cook on low for 8 hours.
There will be a LOT of gravy. I know beef gravy is usually thin, but we like a thick gravy around here. I just ladled most of it into a pot, added a little cornstarch/water mix to it and let it thicken up!
* Cooks Note: Not all roasts are suitable for crock pot cooking. Some are better fro dry roasting. The eye of round can be cooked either way, but I think crock pot is best!
