I Made Mozzarella!
Well, I finally found the time to make the Mozzarella I've been saying forever I was going to make. It was actually fun to do, and I was amazed to see the process of the milk changing from "milk to curds to cheese"- cool. I used the recipe for 30 minute Mozzarella from www.cheesemaking.com which is where I purchased the necessary supplies for making cheese. Easy instructions and how to's on their site and in their book, too. I made the recipe without Lipase, which they recommended for first timer's. It turned out beautiful and someday I'll get a picture of my lovely cheese posted, perhaps! The taste was.....ok I suppose. Very mild- probably due to my not using the Lipase. I'll make it with Lipase next time and see if it improves the taste. I'm waiting until my basil gets ready to pick- mozzarella, basil and farm fresh tomatoes....mmmmmm!
