Irish Soda Bread
One more St. Patrick's Day recipe for you.
This one is from the Whole Foods From the Whole World Cookbook, too.
Irish Soda Bread
1 cup raisins
2 T. unbleached flour
1 1/2 cups whole wheat flour
1 1/2 cups unbleached flour
1 T. baking powder
1 t. baking soda
1 t. salt
1 1/2 to 2 cups buttermilk
3/4 cup sugar
2 T. melted butter
2 eggs
1/2 t. almond extract
1 t. vanilla extract
Toss raisins with 2 T. unbleached flour in bowl. Add 1 1/2 cup whole wheat flour, 1 1/2 cup unbleached flour, baking powder, baking soda, salt, buttermilk, sugar, melted butter, eggs and flavorings. Mix well. Spoon into 2 greased and floured round baking pans that are 2 to 3 inches high. Bake at 350 degrees until bread tests done. May substitute 1/3 cup honey for sugar and melted margarine for butter. Yield: 16 servings
