Lavender Cookies
* This recipe turned out really icky! See the post "Bathwater Cookies" for more info. There is definitely too much baking soda in the recipe. Not sure how to fix it, perhaps 1/2 as much soda or substitute baking powder instead??? The lavender, mint and lemon flavor was a nice combo. though. Live and Learn!
A "tea-time" treat for today:
1/4 cup butter
1/2 cup sugar
1 egg
1 tablespoon organically grown lavender buds, crushed fine
1 cup flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon lemon zest
1 teaspoon mint, finely chopped
Oven 375 degrees. Cream together butter and sugar. Add the egg and lavender and mix well. Sift together flour, soda, and salt. Add dry ingredients to butter mixture and mix. Fold in lemon zest and mint.
Drop by teaspoonfuls onto ungreased cookie sheets. Bake about 10 minutes. Don't overbrown.
