St. Paddy's Day Recipe

Here's the recipe for "What's for dinner" at our house tomorrow night.

 

Irish Potato, Cabbage, and Scallion Skillet

 

4 large potatoes

2 tablespoons olive oil

2 cups shredded cabbage

6 scallions, sliced

1 cup milk

 

 

Bake or microwave potatoes until done.  Peel and coarsely mash.

Heat oil in large skillet.  Add cabbage, cover and saute over med. heat untl limp.  Add scallions and saute, uncovered until cabbage begins to turn golden.  Add a bit of water if the skillet gets dry. 

Add potatoes and milk, stir and turn heat up to med hi.  Cook without stirring until bottom of potato mixture gets browned.  Fluff with a spoon, season with salt and pepper to taste and serve.

But then I have not had my breakfast yet!!

I see you live in Belton. We used to camp out at Belton Lake a lot when I was a kid. I lived around Gatesville, Ogelsby and Waco until I was about 8 or 9. Then daddy got a yearning to travel and I lived all over the U.S.!!

I have lived in Granbury for the past 20 years.
