Question for the Hunters...

and wives who cook the game they bring home !  I have been given several packages of ground deer meat.  I need to know the best way to cook it, please.  I attempted a Tamale Pie with one package but it was awful- not sure if that was entirely the fault of the meat, though.

I know that we were instructed to soak the deer steak before cooking, should I do the same with the ground meat???  The kind lady who gave it to me said it would be good in a "Macaroni Dish"... my family really doesn't eat things like that- picky critters...  Sooooo, if some of you would please give me some idea of what to do with this, I'd be most grateful!  Recipes would be a wonderful blessing!

I'm cooking from the freezer this week as my poor husband missed some work due to a back problem, which sent our tight budget out the window.  Good news is he finally agreed to go to the chiropractor, and though he has 9 "problems" in his spine , they are all in Stage 1 and can be helped.  Not so good news, is it's NOT going to be inexpensive, and of course our insurance doesn't cover it... Well, anyway the LORD knows all of this and He has always provided for us, so this is also in His loving  hands.

OK, I'll be waiting for your help with cooking my deer (that sounds rather odd....venison)!!!

Blessings,

Catherine

We mostly eat deer and elk, sometimes antelope. I just use the ground meat like hamburger. Any recipe that calls for ground beef, we substitute with the deer. If you really dont care for the flavor of the meat, make it into something with a sauce, like spaghetti or chili or some such. It helps hide the flavor of the meat. Hope that helps.

We have friends who give us deer meat each year, and I always use it like beef also (spaghetti, tacos, sloppy joes, etc.). It took a while for me to get used to, but I did, and the kids are growing up on it. It is wonderful to have people supply you with their extra deer meat! You overcome the unusual taste with thankfulness, I think.

If it was a rank buck, the meat will smell gamey (similar to a billy goat). Some people like this taste, but we don’t. If the meat is gamey, I’ll mix it ½ and ½ with ground beef. Our number one ground venison meal/treat is jerky! We buy the mix from Nesco but you can find recipe’s for your own mix on the web.

Here is a recipe that we always use for our own spaghetti sauce:

2 pounds ground beef/deer (brown, drain)
add atleast 1 TBS chopped garlic
add chopped onion to taste
atleast 1 TBS Italian seasoning
1 tsp. salt
pepper to taste
~cook until onion is transparent~
Then add 2-3 15 oz cans tomato sauce (to taste)
Plus 1 can/pint of chopped tomatoes (or fresh)
~Bring to boil, then simmer for 10-15 minutes)

Thanks for the compliment on my secret garden!
Heidi
