Dill Bread
I'm planning to make this today. It's from the
More-With-Less-Cookbook.
Dill Bread
Dissolve 1 pkg. yeast in 1/4 cup warm water.
Combine the following in mixing bowl:
1 cup cottage cheese
2 tsp. dill seed
2 tsp. salt
1/4 tsp. soda
1 unbeaten egg
1 tbl. melted butter
1/2 tbl. minced onion
2 tbl. sugar
Add yeast mixture and 2 1/4 - 2 1/2 cups sifted flour
Stir well to combine. Let rise in greased bowl until double in size. Punch down. Put in two 7x3 or one 9x5 well greased bread pans. Let rise again, about 45-50 minutes. Bake at 350 about 30 minutes. Remove from pans and brush with melted butter.
Option: for a finer grain, add enough additional flour to handle easily and knead 5-10 minutes.
*I will use Cane Juice Crystals in place of sugar, butter (the recipe called for margarine), and at least 1/2 whole wheat flour, the remaining white flour will be organic and unbleached. Also, I think I'll add some parsley and chives.
