Polenta PizzaOK, I know the title is weird... but that's the name of the recipe I plan to try tomorrow. They sound really good to me; but I'm not sure my family will agree. Here's the recipe, which comes from a really neat book Party Lights Healthy Party Foods & Earthwise Entertaining by Linda Rector-Page, N.D., PhD. and Doug Vanderberg. Deep Dish Polenta Pizzas Serves 8-12. Preheat oven to 400. Prepare crust: In a large bowl combine 4 1/2 cups boiling water, 1 1/2 cups cornmeal, 3/4 cup parmesan cheese, 1 tbl. olive oil & 1 tsp. salt. Press crust into 2 greased 9" round pans. Saute 5 cups grated zuccini until soft. Drain liquid and let cool. In a large bowl combine 2 cups non-fat cottage cheese, 1 1/2 cups grated mozzarella, 1 tbl. dry basil and 1/2 tbl. minced garlic. Add zucchini when cooled. Mix well. Spoon filling onto crusts and top with 1 1/2 cups sliced mushrooms, 1 1/2 cups chopped artichoke hearts, 3/4 cup sliced black olives and 6 to 8 tbl. Parmesan cheese. Bake 30 minutes. Brown under broiler 5 minutes. I'll have to make a few substitutions, because I don't have artichoke hearts and my kids wouldn't eat them if I did. I'll make one with mushrooms and one without- I also think I'll saute some onion and put that in, too. Sound good to anyone else???
