Cinnamon Biscuit Bake

OK, here's my latest Kitchen Adventure .  My girls loved this one, and it's really quite simple.  I was planning to make Cinnamon Biscuit Rolls; but in my last minute improvisations, ended up here .  Oh, just in case you've never made them, the biscuit rolls are made by rolling out your biscuit dough, spreading with butter, sprinkling with cinnamon and brown sugar, roll up jelly roll style, cut in slices like cinnamon rolls and bake.

Now, here are the instructions for the  Cinnamon Biscuit Bake:

2 cups  unbleached organic flour

3 tsp baking powder

1/2 tsp salt

1 tbl sugar

1/4 tsp baking soda

1/3 cup shortening

1  cup plain yogurt

1 tsp vanilla flavoring

melted butter

brown sugar

ground cinnamon

Mix first 5 ingredients in medium bowl.  Cut in shortening with a pastry blender or fork until crumbly.  Add yogurt and vanilla.  Mix just until combined.  Butter a round cake pan, and pat biscuit mixture into pan- don't worry about it being bumpy and lumpy, just spread it out a bit.  Drizzle with melted butter and sprinkle with brown sugar and cinnamon.  Bake at 400 for 20-25 minutes or until nicely browned.  Let cool a few minutes before cutting in wedges to serve.  Enjoy! 

Notes:  Mine almost cooked out of the pan, which would have been a mess!  It would be a good idea to put a baking pan underneath "just in case".  I think adding nuts and raisins would really make these tasty; but my silly girls have decided they don't like raisins, and I didn't have any nuts on hand.
