Plum-Honey Preserves

16 medium red or purple plums- slightly underripe, or a mixture of underripe and fully ripe plums

1 cup mild-flavored honey

Use a 6 to 8 quart enamel or stainless steel pot.  Pit plums and cut into large chunks, working over the pot to catch the juices.  Stir in honey.  Bring to a boil over low heat, stirring frequently.  When mixture looks soupy, increase the heat and bring to a full rolling boil.  Skim off foam.  Stir slowly for 15 to 20 minutes, or until it becomes translucent and slightly darker.  It will feel thicker when stirred and thicken further as it cools.

To can:  Pour into hot, scalded half-pint jars, leaving 1/4 inch headspace.  Seal and process for 10 minutes in a boiling water bath.

Yield: 2 half-pints
