Summer's Bounty Bread

I threw this together Saturday evening in a flash.  It was sooooo good, I plan to make it often.

Dough- I used 1/2 of my normal pizza dough recipe.  I only made 1/2 because I didn't have enough flour to make a full recipe, and I was too lazy to pull out the grinder and mill more .

Here's the recipe for the dough:

 To 1 cup warm water add the following:

2 1/2 tsp yeast

1 tsp sugar

Stir to dissolve yeast and sugar and let sit for a few minutes until foamy.

Then, add the following to the water/yeast/sugar mixture:

2 tbl olive oil

1 tsp salt

garlic powder, onion powder, italian seasoning, pepper to taste (a dash or two of each)

Pour mixture into a bowl and add 2- 2 1/2 cups flour, adding more if dough is too sticky.  Knead dough for a few turns, coat with oil, and let rest while you prepare toppings.  Preheat oven to 425.

Toppings:

Olive oil

Thinly sliced fresh tomatoes

Thinly sliced fresh onions

Grated Mozzarella and Parmesan cheeses

Pepperoni (optional)

*any other fresh veggies you'd like to add- zucchini would be good!

Oil a baking pan, sprinkle with cornmeal, then spread dough out to about 1/4 inch thick or so on the pan.

Top with a generous drizzle of olive oil.  Layer on fresh veggies, cheese and optional pepperoni or other meat. 

Bake at 425 until crust is browned and cheese is bubbly. 

Enjoy!

My girlies loved this with a bit of fresh homemade ranch dressing for dipping.  I served this with a big salad and it was just barely enough for our family of 5.  Next time I'm making two!
