Pancake Day
Did you know today is Pancake Day??? Our playgroup went to IHOP this morning for FREE pancakes! I decided to stay home and make our own pancakes instead.
We're having Oven Pancakes or Dutch Babies as they're also called for lunch.
Here's the recipe I'm going to use.
Oven Pancakes
3 large eggs
1/2 cup flour (I'm using whole wheat)
1/2 cup milk
2 tablespoons melted butter
1/2 tsp salt
melted butter
confectioner's sugar
hot cooked fruit, fruit sauce or syrup
In mixing bowl whisk eggs. Add flour a little at at time, whisking after each addition until smooth. Add milk in 2 additions, beating lightly. Lightly beat in melted butter and salt.
Generously butter two 9-inch pie pans. Pour 1/2 of the batter into each pan.
Bake at 400 degrees for 10 minutes; reduce heat to 350 and bake an additional 5 minutes.
Serve immediately with melted butter, confectioner's sugar, and hot cooked fruit, sauce or syrup.
