My Girls' Favorite Chicken Dish

This is what we're having for dinner, and when my middle girly girl found out- she promptly went running to let her sisters know.  That doesn't happen all that frequently around here.  As a matter of fact, you're more likely to hear, "I don't like cassyrole!" from at least two of them .  But, Mommy does like some "cassyroles", so sometimes that's what we have!  They got that "cassyrole" thing from a video, can't remember which one right now; but when I'm making a casserole, they always have to pipe up with, "You worry about your cassyrole, I'll worry about saving the world!".... or something along those lines, silly girls!  They have quite a gift for drama, it seems.  The drive me a bit nutso at times, re-enacting scenes from their favorite shows.  Funny thing is, we only have dvd's and video's and they don't even get to watch those very frequently.  Perhaps I should look into some sort of drama class......or not .

OK, after that bit of rambling nonsense......Here's my directions for

 Love Girls Favorite Chicken:

8 boneless, skinless chicken pieces- I use thighs most of the time

1/4 cup butter, melted

1/2 cup honey

1/8- 1/4 cup soy sauce (start with 1/8 and add more to taste)

2 cloves garlic, minced

3 Tbl sesame seeds

2 Tbl dijon mustard

1 tsp ground ginger

1/2 tsp. pepper

Melt butter, add in the other ingredients (exept chicken); stir to mix.  Place chicken in a lightly greased baking dish and pour sauce mixture over it, spooning sauce over chicken to coat.  Bake at 350 until done (about 1 hour).

When chicken is done, remove it to a serving dish.  Pour sauce into a sauce pan and cook down until thickened.  Pour sauce back over chicken. 

I serve this with rice and steamed or stir-fried veggies.  Tonight I think we'll have rice and a salad. 

For those who don't eat chicken- I have used a similiar recipe to make baked tofu, and I bet this would be excellent, too.
