Organic Cane Juice Crystals

Nancy posted a comment on one of my previous entries and asked

what Organic Cane Juice Crystals are.......

 

Well, here is my attempt at an answer:

 

This is the info. from the bag I have now, which is H-E-B Central Market Organics brand.  

Evaporated Cane Juice Sugar

Ingredients: Organic Evaporated Cane Juice

 

"Our Central Market Organics Sugar goes from the field to the bag within 24 hours of harvest using a "first crystallization" process.  This means the sugar cane stalks are cut, pressed to extract the juice, crystallized and packed all on the same day it is harvested.  Because it is less processed than refined white sugars, our Central Market Organics Sugar retains a natural taste and a light blond color...."

 

I usually purchase Florida Crystals, and would prefer Sucanat but it is cost prohibitive for us. 

 

Note the brand I have now is labelled "sugar", and I recently read that all of these are  refined and therefore not healthy.  In Nourishing Traditions, Sally Fallon only recommends a product called Rapadura, which I've not seen. 

 

When at all possible I use raw honey, but there are times when I want to use  "sugar", so I try to get the best possible form. 

 

If anyone has a more clear explanation than my rambling one, please share it

The main difference between raw sugar and pure sugar is the bleaching/heating process. Sucanat is good, but it leaves an aftertaste to me. I buy just plain Dixie Crystals because it is pure cane sugar. Really the only thing I need it for is some baking. I use honey in everything else, especially my sweet tea!

I'll have to look for that sometime. Would you just substitute it for normal amounts of sugar in recipes?
