My Ultimate Comfort Food
Of course it's chocolate!!!
In our family this is known as "Grandma's Chocolate Cake". It is a very simple recipe, and one I've seen in many cookbooks, called Simple Chocolate Cake, Mississippi Mud Cake, etc.; but to me it will always be: "Grandma's Chocolate Cake". This cake was almost always to be found in my Grandma Stewart's refrigerator. Whenever I would come through the door I was always greeted with a big hug, a smile, and shortly thereafter a piece of "Grandma's Cake". Yum! Grandma always had "something sweet" on hand- this cake, pound cake, Strawberry Jello Cake....... no wonder I love sweet things so much! Here's the recipe:
Grandma's Chocolate Cake
Mix together 2 cups sugar and 2 cups flour.
Mix the following and bring to a boil: 1 cup water 2 1/2 tbl cocoa 1 stick margarine (butter) 1/2 cup Crisco Add to dry ingredients and stir.
Stir together: 2 eggs 1/2 cup buttermilk 1 tsp. baking soda dissolved in buttermilk 1 tsp. vanilla
Stir all ingredients together. Pour into a greased 13x9 pan. Bake at 350 until done.
Icing: Bring to a boil: 1 stick margarine (butter) 1/3 cup milk 2 1/2 tbl cocoa
Remove from heat and add: 1 box powdered sugar 1 cup chopped pecans (optional)
Pour over hot cake and let cool.
Yummmm........
Not the healthiest of my recipe collection, I know.....but it tastes so good, and warms my heart with sweet memories of my dear sweet Grandma!
