Gingerbread Pancakes
We had these for breakfast this morning. Yummy!
Gingerbread Pancakes
1 cup flour
2 tsp baking powder
1/2 tsp sea salt
1 tbl cane juice crystals
1 tbl cinnamon
1/2 tsp ginger
1/4 tsp allspice
1/4 tsp cloves
1/8 tsp nutmeg
1 egg, beaten
1 cup buttermilk
3 tbl butter, melted
1 tbl molasses
Mix dry ingredients together. In separate bowl, mix egg, buttermilk, butter and molasses. Add to dry mixture and stir just until moistened. If batter is too thick, add a bit more buttermilk.
Cook on hot griddle. Makes about 12 pancakes when you use a 1/4 cup measuring cup to scoop them out with.
We had ours with Marmalade Honey.
2/3 cup raw honey
1/3 cup orange marmalade
Mix and warm in the microwave.
The original recipe called for maple syrup instead of honey.
