Turkey Sausage- with Sage :)

Hey guys, I'm on a roll today. Two blogs in one day .

 

I was thinking about my earlier post about Sage, and this recipe came to mind.  Someone sent me a list of breakfast ideas- all cooked in a 13x9 casserole dish.  I don't know who the original author was- as a matter of fact I'm missing page 1 of 6, which I really wish I had! 

 

Here's the recipe for Turkey Sausage, and I'll also post the yummy Hashbrown Bake casserole that I used it in...

 

Turkey Sausage

 

1 lb ground turkey

1/2 t. sage (I would use at least 1 tsp if not more)

1/2 t. thyme

1/8 t. cayenne pepper (I would use a bit more)

1 t. salt

 

Mix together and fry in a skillet; or bake in a loaf pan at 350 for 20-30 minutes or until cooked through.

 

Hashbrown Bake

 

24 oz.  frozen hashbrowns or shred your own

4 tbsp butter, melted

8 eggs

1/2 cup half & half or cream (I used whole milk)

4 oz can diced chilis -optional (I didn't use these)

1/2 tsp salt

1/4 tsp pepper

2 cups shredded cheese

1 cup cooked turkey sausage or hamburger-optional

 

Preheat oven to 350.  Pour hashbrowns in a bowl ( I microwaved them a bit to thaw).  In another bowl, beat together eggs, butter, milk, salt & pepper.  Pour over potatoes and stir.  Add meat, cheese, and chilis and stir.  Pour into greased 13x9 pan.  Bake 45-60 minutes or until middle is cooked through.  Serve with salsa, ketchup, or gravy.  I recommend gravy!

 

I halved the recipe and baked it in an 8 inch square pan.  I wasn't sure if my family would like it.  Next time I'm making the big one!
