Crystal's Pumpkin Cake

     OK, if you haven't already done so- you really need to visit Crystal's blog and try her Pumpkin Cake recipe!   Mine is in the oven right this minute, and let me tell you the batter is delicious!  I can only imagine how fabulous this cake will be when actually cooked and frosted with Cream Cheese Frosting.....oh my!!!  And, the great thing is, it's even made with all those good for you ingredients like whole wheat flour, coconut oil, olive oil, and cane juice crystals instead of the "not so good for you" alternatives.  She's made my day- I "NEED" comfort food today, and this is it for sure! 

This is definitely on my Thanksgiving Menu, too.
