Turkey Chili

Here's a "how-to" for my favorite chili.

 

Turkey Chili

 

2 lbs. ground turkey

1 small onion chopped

 

Cook turkey and chopped onion in a few tbl. of cooking oil until turkey is browned and onion is soft. 

Add:

1/2 cup chili powder (you may need to adjust this amount depending on the heat of your chili powder- and how HOT you want your chili)

2 to 3 dried chili peppers, seeds removed (optional)

1 to 2 tsp. cumin

1 tsp. garlic powder (or to taste)

salt to taste

1 can diced tomatoes

enough water to cover turkey completely- usually 3 cups or so.

2 tbl masa harina dissolved in a little water (optional to thicken) -add after the chili has simmered for a while.

 

Simmer for at least 30 minutes- the longer the better.  I usually stick it in the crockpot on low until dinner time.  It's even better when reheated the next day.  Remove dried chilis before serving.   

 

Serve with grated cheese and corn bread,  tortilla chips or crackers.  My kids like it with a spoonful of sour cream on top, too.

 

Note: I think some beans would be great in this recipe, but my Texas born and bred husband says real chili doesn't have beans in it! - Put 'em in there if you like beans in your chili.  He also frowns on sugar in cornbread- I sneak it in anyway sometimes!   Must be a southern thing- or is it only in Texas???
