My Latest Kitchen Adventure

  Last night's kitchen adventure or recipe experiment turned out really good, so I thought I'd share it with you.  It was one of those last minute, time for dinner, it's HOT HOT HOT, and ugh I really don't want that for dinner tonight evenings.  I had planned on making Pasta with Alfredo sauce, but it just didn't sound good at all and my girls have been on a "noodles with butter only" kick for a few weeks.  So, here's the pasta sauce I threw together from the odds and ends hanging out in the fridge and pantry for me and my husband.  My dh said it was very good, and I thought it was pretty tasty myself.  Sorry about the lack of exact measurements, that's just the way I do things sometimes! 

Olive oil- 1/2 cup or so

bell peppers- orange, red, green diced ( I was using odds and ends here, so approx. 1 large bell pepper total)

garlic 2 cloves, minced

sun-dried tomatoes- 8 or 10, snipped with the kitchen shears into small pieces

Add above ingredients to pan and saute until peppers and tomatoes are softened. 

Add:

1/4 cup or so sliced green olives

Marjoram- to taste, I used about 1 tsp fresh

Thyme- to taste, I used about 1/4 tsp dried

Basil- to taste, I used about 1 tsp dried

Fresh ground black pepper

Sea Salt

Turn heat down and let herbs flavor the oil for a few minutes.

Cook pasta- I used tri-color Fiori, drain and toss with sauce.  Top with freshly grated parmesan.  Enjoy! 

Note* I had planned on adding a handful or two of fresh spinach, but left it out by accident- I think spinach, zucchini, and onions would make this sauce really yummy.  Perhaps that will be next week's kitchen adventure!
