Cooking with Chives

OK,  I know I'm a day late...sorry 'bout that!  The girls are going to VBS this week, so I'm trying to do some reorganizing while they're gone....and sneaking in a nap or two (ssshhh) .

 

Chives are great to have on hand in the kitchen.  I toss them on baked potatoes, salads, eggs, soups- just about everything at one time or another. 

 

Here's a couple of recipes for you:

 

Chive Butter

 

So simple- just mix equal parts chopped chives with softened butter.  Chill.  This is great on potatoes or in hot biscuits or dinner rolls.  MMMmmm!

 

Cheddar and Chive Muffins

 

4 cups flour (I like 1/2 whole wheat & 1/2 white)

2 tsp baking powder

1 1/2 tsp salt

1 tsp baking soda

1/4 cup butter

6 oz. Cheddar cheese, shredded

1/4 cup snipped fresh chives

dash of garlic powder (optional)

2 cups buttermilk

1 egg, beaten

 

Sift flours, baking powder, salt and soda in bowl.  Cut in butter until crumbly.  Stir in cheese and chives.  Add garlic powder, if desired.  Mix buttermilk and egg together.  Add to flour mixture, stirring just until blended; batter will be thick.  Spoon into greased muffin cups.  Bake at 350 for 30 minutes or until golden.  Serve warm.  Makes 24 muffins. 

 

Don't forget to use the chive blossoms, too!  Sprinkle them on salads, mix with cream cheese to make pretty tea sandwiches, use them to make lovely pink vinegar.....
