Herb of the Week- Chives
Chives
Allium schoenoprasum
Chives are another easy to grow herb that I try to never be without. They are a perennial herb and do well in the herb garden as well as on a sunny windowsill. I almost always have a pot or two of chives inside for snipping and garnishing a bowl of soup, potato, or salad.
You can grow chives from seed; but I prefer to buy a small pot from a nursery and divide it into 3 or 4 small plants. In my area, chives planted out in the herb garden will usually die back in the winter; but if they're mulched well, will most likely sprout back out come springtime. I usually pot mine up and bring them indoors anyway.
Chives have beautiful edible blossoms also. The pretty lavender-pink flowers make a pretty addition to the salad bowl or a nice herb vinegar.
Tomorrow I'll share a recipe or two using this onion flavored herb.
Garden Blessings,
Catherine
