In the Kitchen with Rosemary

Rosemary is a versatile herb to use in your Cooking Adventures.  I call them adventures, because at least in my kitchen you never know how things may turn out.  Perhaps I should call them "experiments" instead; but then I'm not sure my family would eat my latest creation! 

Here's my all-time favorite Rosemary recipe thus far:

 

Rosemary Squares

 

2 eggs beaten

1 cup brown sugar (or cane juice crystals)

2 t vanilla

1 cup flour (I like whole wheat)

1/2 tsp salt

1 tsp baking powder

1/2 tsp Rosemary

2/3 cup pecans (walnuts are good too)

1 cup raisins or other dried fruit

 

Preheat oven to 350.  Grease and flour an 8x8 pan.

Beat eggs, gradually stir in brown sugar and vanilla.  Sift together flour, salt and baking powder.  Add to egg mixture.  Stir in Rosemary, pecans and fruit.  Bake 30 minutes, remove from pan while warm and cut into squares.

Here are a few other ideas for cooking with Rosemary:

Stir 2-3 tsp chopped Rosemary into your favorite pound cake batter.  Add some to the whipped cream, too! 

 

Tie a bunch of Rosemary together and use as a basting brush for the barbeque.

 

Toss a few sprigs of Rosemary on the coals of the grill. 

 

Add chopped Rosemary to biscuit or bread dough. 

 

Top foccacia bread with olive oil, sun-dried tomatoes and chopped Rosemary.  Mmmmm!!!

 

Put a small sprig of Rosemary along with some Thyme, Parsley, garlic and onion inside a chicken before baking or roasting.  Note:  a small sprig of Rosemary will do.  Trust me on this, I once made Herb Roasted Chicken that was so strongly "herbed"  no one would eat it!  Kitchen Adventure # 42, I believe.

 

 

 

OK, now that I'm craving Rosemary Squares, Herb Roasted Chicken and biscuits with Rosemary...

We love Rosemary too! A must for Focaccia as you've stated! I L O V E it! We will have to try your Rosemary Squares. I would never have thought of a combination of brown sugar and rosemary tasting good! I'm enjoying your blog!

I've always thought of rosemary as a cooking herb...thanks for the recipes and broadening my use of it! Everything sounds awesome...
